And now for something totally different. Are you familiar with clarified butter or ghee? Clarified butter is basically just butter with the milk fats cooked out. Ghee is made by cooking clarified butter just a little longer – you can even add herbs and spices to kick it up a notch!
So, why not just use butter? Well, butter is all well and good, but many people are lactose intolerant. While research is still divided on the topic, some studies suggest that 65% to 75% of humans have some level of lactose intolerance.
Even if dairy doesn’t bother you, clarified butter/ghee is worth a try. Why? First of all, it is loaded with healthy fats and has been shown to lower unhealthy cholesterol levels. Secondly, because it’s DELICIOUS! It is rich and full of flavor. Definitely worth a try. You can pick up some pre-made ghee at most grocery stores, usually in the asian food department. I like to make my own. It’s super simple and much cheaper. Here’s a great article from Nom Nom Paleo, one of my favorite websites, detailing the process of making ghee.
