Sorry posts have been sparse lately! I spent the last week in Dallas coaching two athletes for the IWF Masters World Cup and USAW Nationals. It was pretty amazing to see the top weightlifters and top weightlifting coaches in the US. We saw some great lifting and had a lot of fun. Actually, we had a LOT of Tex-Mex. It was delicious, and now it’s time to jump back on the wagon.
Inspiration struck and I made a bunch of these for the week:
Beef sautéed with onions, carrots, mushrooms, peas (not quite paleo, but you could sub sugar snap peas), and tomato paste.
Peppers parboiled for about 6 minutes.
Sweet potatoes cooked in the microwave and whipped with coconut milk and green chilis.
Baked at 350 for 35 minutes.
They are AWESOME!! It’s always good to get another recipe in my paleo-ish cooking arsenal.
